The production system starts with the selection of strains, which are fed by revalorizing different side streams and by-products from food industries. Then comes the fermentation and further processing phase, which can follow two different paths. One to obtain mycelium and the other to obtain protein powder. These two formats allow us to have a wide variety of uses, from meat analogues to protein snacks, among others.
